Carrot Cake with Cream Cheese Frosting

Carrot Cake with Cream Cheese Frosting
Angie Prince
2 Cups flour
1 tsp baking soda
2 tsp cinnamon
2 cups sugar
1 tsp salt
Mix together and add to:
1 1/2 cups oil
2 cups grated carrots
1 tsp vanilla
3 eggs
1 can crushed pineapple mostly drained
1 cup coconut
nuts (optional)
Bake in prepared 9X13 pan at 350 for 45 min to 1 hour.
Allow to cool then frost.
Cream Cheese Frosting:
3 Cups powered sugar
8 oz cream cheese, softened
2 T butter or margarine
1 tsp vanilla
milk- add slowly to achieve desired consistency

the 1 tsp mystery ingredent is SALT hope this helps!

Thanks for that info Angie.... I fixed the recipe :-) Salt is a very important ingredient. oops.
