Dinner in a Pumpkin
Ingredients:
1 Medium sized pumpkin
1 small onion chopped
2 Tablespoons butter or oil
1 pound ground beef
2 Tablespoons soy sauce
1/4 Cup brown sugar
1 small can sliced mushrooms, drained (optional)
1 can cream of chicken soup
½ Cup sour cream
1 ½ Cup cooked rice
1 can sliced water chestnuts, drained
Directions: Cut off the top of the pumpkin and thoroughly clean out seeds and pulp.
Paint a face on the front of pumpkin with magic marker. In a large skillet, saute onions in butter/oil until tender, add meat and brown. Drain drippings from skillet. Add soy sauce, brown sugar, mushrooms, sour cream and cream of chicken soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the cleaned pumpkin shell.Place pumpkin top on and place entire pumpkin with filling on a baking sheet.
Bake at 350* for one hour to an hour and a half until the pumpkin is tender. Put pumpkin on a plate, remove lid and serve. For your vegetable, you can scoop out cooked pumpkin and serve.

Mommy and Me Halloween Party
The Mommy and Me Halloween Party will be on Wednesday, October 22, 2008.
It will start at 10:00 a.m. and go until around 11:15.
We will have Sugar cookie decorating, crafts, games, and a costume parade.
